The Restaurant
My name is Luise Willoughby and I have been working in the restaurant service industry for over 25 years…the last 18 years managing alongside my parents. We also have a team of inspired, creative, and willing young men and women who are excited to be a part of this adventure…one of them being my 17 year old son Liam, who started in the kitchen at the age of 14 with our family business. We are also looking to expand our team and have all positions available to hire
Our Kitchen
Our vision is to create an atmosphere that inspires West Coast rustic, warm and inviting, while supporting and featuring local artists, including First Nations culture, all while fully embracing the stunning views of the Pacific Coast from every window. Our vision also includes supporting local community farms and products, and infusing them into our set menu along with our daily specials, that will highlight seasonal seafood and produce, including local beef and chicken. All community suggestions and input are always welcomed by me. West Coast fusion style, alongside homemade bar and grill menu items with specialty sauces and aioli's to compliment and create a unique “twist” on some classic favorites'.
One of the most requested suggestions I have taken in over the years is a need for vegan, vegetarian and gluten free menu items. I have heard the call and am bringing an extra fryer solely for the use of vegan and gluten free items… no cross contamination. We will also be offering gluten free buns, bread and choices on every aspect of the menu for those that require this!!!

Just wanted to reintroduce myself to our community and friends from all around this incredible Island and beyond!!! My family and I have been blessed to have had so much love, support and unconditional kindness throughout the almost 18 years we owned the Rockinghorse Pub. Over the years there were many “ups” and “downs”, both personally and professionally. Each one of these challenges teaching us how vital unity, community and the incredible importance of amazing staff (family) are, as no success can ever be accomplished alone. Over these years, all of the incredible and beautiful customers I have been honoured to get to know, you have all become way more than customers to me…you have become a part of my family and my heart. We sold the Rockinghorse a year ago and a big door has closed for me and my family. I can honestly say the staff continuing on this new journey with Pacific Moon Rising feel the exact same way about all of you, understanding and honouring my vision and passion for the importance of the “experience” when visiting our new Restaurant.
